Bread just got a new meaning. Use crunchy granola and pieces of apple to make this dough-licious loaf.
150 g sugar
115 g butter or margarine, softened
1 container (175 g) Greek fat-free
honey vanilla yogurt
2 eggs
250 g (475 ml) Gold Medal™ all-purpose flour
10 ml ground cinnamon
5 ml baking powder
5 ml vanilla
3 g salt
1 apple, peeled, coarsely chopped
(about 240 ml)
40 g chopped walnuts
1 pouch (2 bars) Nature Valley™ oats 'n honey crunchy granola bars (from 252 g box), crushed
Heat oven to 160 °C (325ºF).
Grease bottom only of 20x10x6-cm loaf pan with shortening or cooking spray;
lightly flour.
In large bowl, beat
sugar, butter, yogurt and eggs with electric mixer on medium speed until light
and fluffy. On low speed, beat in flour, cinnamon, baking powder, vanilla and
salt. Stir in apples and walnuts. Spoon batter into pan. Sprinkle crushed granola
bar evenly over top of batter, pressing lightly into batter.
Bake 1 hour 5 minutes
to 1 hour 10 minutes or until toothpick inserted in center comes out clean.
Cool 5 minutes. Loosen sides of loaf from pan; remove from pan to cooling rack.
Cool completely, about 1 hour. Use serrated knife to cut loaf into 12 slices.
Wrap tightly and store in refrigerator.
